  1. Mix equal parts honey and soy sauce and add ginger and garlic. Brush on salmon or chicken before roasting or grilling.

  2. Use in your favorite granola recipe.

  3. Toss cubes of roasted sweet potatoes with honey and red pepper flakes.

  4. Make a honey mustard dipping sauce for chicken wings with equal parts honey, mustard, and mayonnaise.

ROASTED SWEET POTATO SLICES WITH SOURWOOD HONEY

ROASTED SWEET POTATO SLICES WITH SOURWOOD HONEY

Ingredients

  • 2 medium sweet potatoes, about 1 1/2 pounds
  • 1 tablespoon olive oil
  • 2 tablespoons sourwood honey
  • Kosher salt, for sprinkling
  • Rosemary garnish

Instructions

  1. Place a rack in the center of the oven, and preheat the oven to 425 degrees F.
  2. Scrub the sweet potatoes and pat dry. Cut the sweet potatoes in half lengthwise with a heavy knife. Cut each half into 5 to 6 slices.
  3. Place a 12-inch skillet over medium heat for 2 minutes or until it nearly smokes. Add the oil and distribute it evenly on the bottom of the skillet with a metal spatula. Turn the heat back to medium, and add the sweet potato slices, one by one, to the skillet. Let cook about 2 minutes, tossing the pan. Turn off the heat. Turn the slices back upright as best you can. Drizzle over the honey and sprinkle with salt.
  4. Place the skillet in the oven, and bake until the sweet potato wedges are fork-tender, about 20 to 25 minutes.
