Ingredients

  • 2 cups Miller’s Choice Unbleached Flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 stick (8 tablespoons) unsalted butter, at room temperature
  • 1 cup sugar
  • 2 large eggs
  • 1 cup mashed very ripe bananas
  • ¼ cup sour cream
  • 1 ½ teaspoons pure vanilla extract
  • ¾ cup chopped walnuts or pecans, optional

Instructions

  1. Preheat the oven to 350°F. Mist a 9-inch loaf pan with vegetable oil spray or grease with soft butter. Set aside.
  2. Whisk together the flour, baking powder, baking soda, and salt in a medium bowl.
  3. Beat the butter and sugar in a large bowl until well combined. Add the eggs, banana, sour cream, and vanilla, and beat until blended, scraping the bowl as needed. Fold in the flour mixture until smooth. Fold in the nuts, if desired.
  4. Turn the batter into the pan and bake until the bread is firm when lightly pressed in the center and a toothpick inserted in the center comes out clean, 50 to 55 minutes.
  5. Cool in the pan 20 minutes on a wire rack, then remove from the pan and cool completely before slicing. Makes one loaf.

Notes
