TN caviar

Ingredients:
1 (15-ounce) can black-eyed peas, rinsed and drained
1 (15-ounce) can black beans, rinsed and drained
1 (15-ounce) can whole kernel corn, drained
1 1/2 cups OLD MILL CHUNKY HOMEMADE SALSA
1/2 cup finely chopped onion
1/2 cup finely chopped red or green bell pepper
1/2 cup chopped fresh cilantro
2 tablespoons olive oil
Juice of 1 lime
1 jalapeno pepper, seeded and minced, optional
Tortilla chips

Directions:
Combine black-eyed peas, black beans, corn, salsa, onion, bell pepper, cilantro, olive oil, and lime juice in a large bowl; stir well. Stir in jalapeno, if desired. Cover and chill at least 2 hours. Serve with tortilla chips.

Yield: 6 cups
